Peach Cream

Peach Cream


▪ 1 cup peaches
▪ 1 1/4 cup sugar
▪ 2 tb cornstarch
▪ 1/4 ts salt
▪ 2 cups milk
▪ 2 large eggs
▪ 1 tb vanilla
▪ 2 cups light cream


Coarsely chop peaches in food processor or blender. Combine peaches with 1/4 c of sugar and chill. Combine 1 c sugar with cornstarch and salt. Blend in milk gradually. Microwave on high (100%) for about 8 minutes or until thick, stirring two to three times. Beat the eggs and add gradually to the cornstarch mixture, stirring constantly. Microwave, on high (100%), about two minutes or until thick and creamy. Chill. Add vanilla and cream to mixture. Stir in peaches. Place in ice cream freezer and freeze, following manufacturer’s directions.
