● 1 1/2 cups sugar
● 9 lemons
● some sprigs of mint
Combine sugar and 2 1/2 cups water in a small saucepan; bring to a boil and boil for 5 minutes. Remove from heat, cool slightly.
Reserve 1 lemon to slice for garnish.
Grate zest of 2 lemons; juice 8 lemons.
Combine juice and zest with warm syrup. Steep 1 hour.
